Caramelised Onion Relish

This relish is sweet, and full of oniony goodness. Put on your sandwich, with steak, roast, just anything you'd normally pair with onions! This recipe is so versatile, and only has a handful of ingredients. All you need is some patience, as caramelising the onions does take some time.
Ingredients:
- 1kg brown onions
- 3 tablespoons olive oil
- 1/3 cup balsamic vinegar of your choice (I use quince balsamic vinegar)
- 1/3 cup light brown sugar
- 2 tablespoons red wine vinegar (optional)
- Salt and pepper to season
Method:
- Peel and slice your onions to desired thickness, I cut my batch into about 3mm slices.
- Add your onions to a large pan and add the olive oil. Give it a mix until the oil is coating the onions, and place on a medium to low heat.
- Cook the onions for around 15 minutes, or until the onions have softened. Be sure to stir them regularly, as you don't want them to brown!
- Once softened, add in the balsamic vinegar and brown sugar. Increase heat to medium, and cook until onions have caramelised, and the sauce has turned thick and syrupy. This may take 1-1.5 hours, so be sure to keep stirring it to reduce sticking/burning.
- Once caramelised, season with salt and pepper. If the relish is overly sweet for your liking, you can add in the red wine vinegar to tone down the sweetness. Just cook it for an extra 5 minutes after adding the vinegar.
- Distribute into sterilised jars, and store in the fridge. Once opened, eat within 2 weeks!
